I received the Savilon wine as a gift from colleagues from the Czech Republic. That was the first time I heard of “Savilon” as the Czech name for Sauvignon Blanc. A pleasant, semi-dry wine.

Savilon is a traditional Czech name for the Sauvignon Blanc variety, which has been used in the North Bohemian region for decades. It is a name that was created in an effort to bring the French variety closer to the domestic environment and at the same time clearly distinguish itself from the international name. Sauvignon Blanc is one of the aromatic white varieties originating in the French Loire Valley and Bordeaux, but in cooler locations it can give an extremely interesting and mineral expression.

In the conditions of the Žernosecký subregion, Savilon is characterized by higher acidity, pure varietal character and the ability to create naturally concentrated wines, which is essential in the “Vine Selection” category. This attributive classification points to the high sugar content of the grapes at harvest and the emphasis on the ripeness of the grapes without losing freshness.

The Žernoseky winery continues the long tradition of growing grapes in the vicinity of the village of Velké Žernoseky, which is one of the most historically important wine-growing locations in the Czech Republic. The vineyards are situated on steep slopes above the Elbe River, often on volcanic soil with a high basalt content. This geological composition is one of the key attractions of the region and significantly contributes to the mineral character of local wines.

Today, the winery combines a traditional approach to working in the vineyard with modern technology in the cellar. The emphasis is on selective harvesting, gentle processing of grapes and preserving the authenticity of the place of origin. Savilon is one of the wines that clearly shows the signature of the region as well as the philosophy of the producer.

The wine has a clear, light yellow color with greenish reflections, typical of Sauvignon blanc from cooler regions. The color appears fresh and indicates good acidity.

The aroma is medium to intense and clean. There are notes of gooseberry, green apple, citrus peel and subtle herbal nuances. In the background there is a readable mineral trace and a hint of wet stone, typical of Žernosek vineyards.

The taste is juicy and distinctly fresh. Citrus, white currant and green fruit dominate, complemented by a delicate saltiness. The acidity is firm, well-integrated and supports a longer and clean aftertaste. The wine has a balanced effect and without unnecessary aromatic ostentatiousness.

The alcohol content is usually around 12.5–13.0% vol., which corresponds to the “Vine Selection” category and maintains a balance between ripeness and freshness.

The ideal serving temperature is 8–10 °C. At this temperature, the aromatics and mineral character of the wine are best expressed.

Savilon is suitable for fish, seafood, light poultry preparations and vegetable dishes. It also works well with goat cheeses, or with simple Czech cuisine based on fresh ingredients, such as trout, or cold appetizers.

Wines from the Žernosecké vinařství regularly appear at domestic competitions and tastings, where they are appreciated mainly for their terroir authenticity and pure expression.

Savilon, selection of grapes Žernosecký vinařství is an example of how Sauvignon Blanc can appear in northern Bohemia in a matter-of-fact, mineral and varietal way. This is a wine that does not rely on showiness, but on origin, structure and balance. For a lover of fresh and terroir white wines, this is a reliable and informative choice.
